Like the Japanese theatre after which it is named, Kabuki Raw is staged in a unique setting which permits guests to view Rafael Carrasco at work in the Kabuki kitchen and it is here, using only the highest quality raw materials and outstanding seafood from sustainable fisheries in the Straits, where his most emblematic dishes are served up together with others specifically created for FINCA CORTESIN.

Finally and during the months of July and August, is the Repsol Guide Two Star Don Giovanni restaurant (Don Giovanni Madrid and Don Giovanni Finca Cortesín), Best Madrid-Based Italian Restaurant, partaking in Parma’s Pasta World Championship 2012… By combining respect towards tradition and innovative ingenuity, Andrea Tumbarello, Don Giovanni’s sicilian chef in Finca Cortesín, brings authentic Italian dishes whilst continually being on the receiving end of many important awards and accolades.
